THE VARIETY: Cesanese, Sangiovese in half with a small percentage of smaller varieties obtained from vineyards with 4,500 vines per hectare plant density produces on average 0.8 kilos of grapes per plant.
THE GRAPE HARVEST: In boxes of mid-October before the sangiovese then the cesanese.
THE WINEMAKING: Classic maceration with pumping and delestage for 15 days, malolactic fermentation immediately follows the alcoholic.
AGING: It is aged in new oak barrels for 12/18 months.
WINE CHARACTERISTICS: Intense ruby red color and dull, the nose is powerful jams of wild fruits, sweet spices, licorice and tobacco, in the mouth is powerful but elegant, vigorous and persuasive, strong as iron and soft as silk.
FOOD PAIRING: Important roasts, braised meats, game and aged cheeses. Recommended serving temperature 18 °.
