In the first years of the 1980s Piero Costantini acquired in the town of Monte Porzio Catone, in the heart of the wine-making tradition of the Frascati, the vineyards that belonged to the Bishop Pallotta with the intention of producing a high prestige able to keep up with the highest vineal qualities of northern Italy. The road taken was long and difficult, undermined by the temptation of an easy but surely unsuccessful market, the Frascati dominated the international markets merely thanks to its name. The first thing was reimplanting new vineyards including minor varieties (Bombino, Greco and Malvasia del Lazio) in spite of the more productive ones (Malvasia di Candia and Trebbiano) but of vastly inferior quality, cultivating in rows with short pruning systems, (Guyot and spurred cordon) in order to drastically reduce its productivity. At a later time, the whole vinification process has been modernised giving ample room to cold technology. At the moment the company can be considered to be on the cutting edge with respect to its dimension.
