THE HISTORY: In the State Archive of Rome, the envelope "1286, registered in 1806, reads “The Filonardis, Roman Pa-tricians, had many proprieties and farmhouses in this zone but the farmhouse assigned to them is to be found between Massarosa and Torricella, here Natale Filonardi produced the best thirty wine casks of the area”. Today it is still one of the few vineyards designations (Cru) of Frascati appellation recognised and certified by the designated regulatory bodies.
THE VINEYARD AND THE VINIFICATION: Filonardi is found on a steep hill, the terrain appears particularly rich of mi-croelements and in particular of metals of a clearly volcanic origin. Malvasia del Lazio, Malvasia di Candia, Trebbiano and Grechetto are present, all cultivated following the Guyot method, the plant density is of 4000 stumps per hectare (roughly 9800 per acre). The whole grapes undergo a soft pressing, the fermentation takes place at a controlled tem-perature (18°W20°). It fines with noble lees for 3 months.
