THE STORY:  In the state archive of Rome there is an envelope of number 1286 written in 1806 that says: “ The Filonardis, roman aristocratics, had several properties and farmhouses in this area but the farmhouse headed to them is situated in the area included between Massarosa and Torricella. Here Natale Filonardi used to produce the 30 best quality barrels of wine of the area”. Nowadays it is one of the few Frascati crù to be recognized and certified by the control authorities.

THE VINEYARD AND THE WINEMAKING:  Filonardi is situated on a steep hills, west oriented. The ground is rich of micro elements, especially volcanic originated metals. Malvasia del Lazio, Malvasia di Candia, Trebbiano and Grechetto are the vine varieties. They are cultivated with guyot style with an implantation density of 4000 stumps per hectare. The unaltered grapes are subjected to a soft press. The fermentation is done at the controlled temperature of 18-20°C. Aging “sur lies” for 3 months.

THE WINE CHARACTERISTICS AND FOOD PAIRING:  It is a straw yellow wine. Subtle and intense fragrances remind of ripe fruits and spices. In mouth it has good structure with an intense remind of the involved minerals.
It is a versatile wine that matches with elegance the whole roman cuisine, mixed grills and cheeses. It is suggested to try it with shellfishes and smoked fish. Recommended serving temperature is 14°C.
